GMCC Highlights Erica Suffoletto in the 'Community Proud' Series, Sponsored by CorePlus Credit Union

The Greater Mystic Chamber of Commerce features Erica Suffoletto in its ongoing ‘Community Proud’ series, sponsored by CorePlus Credit Union. Erica, the Executive Cake Designer at Zest Fresh Pastry in the Velvet Mill, exemplifies dedication, creativity, and community spirit. 

Erica’s passion for baking began in childhood, and her journey has culminated in over a decade of creating unforgettable moments for customers at Zest. As the mastermind behind custom cakes, Erica handles every detail—taking orders, baking, filling, assembling, and delivering. Specializing in wedding, birthday, and anniversary cakes, she crafts 3–5 cakes each weekend, providing a personal and customized experience.

“Not many bakeries focus on custom wedding and anniversary cakes in this region,” Erica shares. “It’s an honor to fill that void and bring people’s visions to life.” 

Erica’s journey began with a degree in Baking and Pastry Arts and a bachelor’s in Food Service Management from Johnson & Wales University. She honed her skills as Executive Pastry Chef at Mystic Market for 13 years before joining Zest. Over the past decade, Zest has become her second home. 

“Gabrielle, Zest’s owner, and I met 15 years ago, and working here has been a dream. I absolutely love what I do. I wake up every day excited to bake,” Erica says. 

Erica draws inspiration from her son Jacob and her colleagues at Zest, whom she affectionately calls her sisters. “The team’s diverse backgrounds and experiences fuel our creativity and make Zest truly special,” she explains. 

Though Erica lives in West Warwick, RI, she’s worked in the Mystic area since 2001. She describes the community as timeless and close-knit: “There’s something about this place that makes it feel like time stands still and bonds are never broken.” 

When not crafting cakes, Erica enjoys powerlifting, spending time with her two dogs, Dino and Buddy, and staying energized through fitness competitions. For her, community is about unity: “It’s everyone coming together, sharing their unique gifts, and celebrating what we all have to offer.”
